Right now, I just made myself a ham sandwich on a kaiser bun. I topped it with some lettuce, a slice of tomato, a couple slices of American cheese, then some honey mustard and mayonnaise. I completed my plate with a dill pickle and a handful of garlic and herb flavored potato chips ... mmmm ... now I can have some lunch - without making a mess in the kitchen. :D
I am trying to lose weight as summer time is here. however my workload is very heavy at the moment so i need good food but not much time to cook. What I cooked tonight:
Mixed soup:
Material: sliced chicken, sliced tofu, sliced mushroom, shrimp shell, seaweed, Chinese cabbage, spring onion, sliced ginger
Ingredients:sesame oil, salt, pepper
Method: boil a pot of water then pure all the material and ingredients in, cook for about 10 minutes. ready to eat.
Sounds terrible? Actually it tastes nice and not much cook skill required, most important, do not worry about putting on weight from that.

6 tablespoons extra virgin olive oil
Salt (as needed)
Pepper (as needed)
Chop tomatoes, season with salt, pepper, chopped basil and oil.

Today I'm cooking a chicken bog....
some of you may not know what that is...here's the recipe:
Paula Dean's Chicken Bog Recipe
(there are many ways to make it but this is a basic recipe)
Ingredients
* 1 (3-pound) chicken, quartered
* 1 pound smoked link sausage
* 1 cup chopped onion
* 1/2 cup (1 stick) butter
* 2 teaspoons Seasoned Salt (recommended: Lawry's)
* 2 teaspoons *House Seasoning
* 1 teaspoon ground red pepper
* 1 teaspoon ground black pepper
* 3 bay leaves
* 8 cups water
* 3 cups raw white rice
Directions
Slice the sausage into 1/2-inch pieces. In a stockpot, combine the chicken, sausage, onion, butter, seasonings and bay leaves. Add the water, bring to a boil, cover, and cook at a low boil for 40 minutes. Remove the chicken from the pot and let cool slightly. Pick the meat from the bones, discarding the bones and skin. Add the rice to the pot and bring to a boil, stirring well. Boil for 10 minutes, then reduce the heat, cover the pot, and simmer for 10 minutes, or until the rice is done. Remove the bay leaves, and return the chicken to the pot.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
................................
for mine...I chose to use yellow rice instead of plain white rice....sometimes I use brown rice...(which I like much better than just regular rice)....I use fresh garlic instead of the garlic powder. Also I don't use the bay leaves or the butter....

MMM....mmm...sounds good Lisa hun.
We had Easter dinner yesterday & we cooked a ham with brown sugar, pineapples (forgot the cherries). I also poured a little bit of ginger ale over the ham right before we put it in the oven. So as we basted it, the brown sugar & ginger ale had a great sweet mix to it & added more sweetness to the ham itself. Also, I made mashed sweet potatos, fresh asparagus & garlic buttered biscuits.
For dessert it was fresh baked brownie with ice cream & sliced strawberries on top!
lisa843
