LOL...Teej, I didn't cook much when it was just me. Since my fiance came to live with me, I've been cooking a whole lot. I always thought I wouldn't be a very good cook, but YES I'm going to "toot my own horn here", I'm a very good cook! :D

I'm making chicken enchilada tonight and Mexican-style rice. What other Mexican dishes are yummy and not that difficult to make? I've put together burritos, fajitas, teqiutos.. that's about it..

You know T12am as far as Mexican dishes I've made, I've made the same as you. I have also made tacos, which came out pretty good, just ground beef tacos though with a mexican spice for the meat. Enchiladas I haven't made yet as I remember my stepmother making them when I was younger & they seemed to take alot of time. I just might try them 1 day soon though.
Now I know what I want to eat over the weekend, Mexican food...thanks T12am! :D
LOL...to give you a little time to get here Teej, come on by over the weekend. My fiance will be back from Atlanta & then I will be REALLY cooking again. This week it's been easy cooking for me, hot dogs, mac & cheese type of stuff! :D

Next time you make it, send some my way! I make some pretty good spaghettii out of the already made spaghettii sauce, I add extra spices, meat & even more tomatoes to it, comes out pretty good. I have to say the best that I have done on plain memory & childhood memory to boot was when I made the meatloaf that my mother used to make. I used to watch her cook when I was very young, I somehow remembered the things she put in it to make the meatloaf. 1 day I decided to try it & I couldn't believe it, but when I took that first bite & tasted just like my mother's! I was so proud of myself that day! :)

arc: dumplings are good ... please post your recipe. :)
I love making a mess in the kitchen. I do it mostly at breakfast or brunch ... the typical eggs, bacon, sausage, french toast, and my favorite - corned beef hash! :D I think I'm also getting good at making omelets. Otherwise, I enjoy noodle soup dishes ... so far, it's only my niece who's willing to sit on the table and eat with me once I finished preparing it.
As much as I enjoy preparing meals, the clean-up part is such a major pain in the a**! :(
To Stoner and other dumpling lovers
DIY dumplings are very delicious. If you live in the town/city has chinese supermarket, you may simply by the ready-to-usewraps/covers. I prefer to use chinese chives mixed with pork mince as fillings.
Here is the website about making dumplings:

Feel free to ask any questions. Some of my friends call me "dumpling girl"

LOL ... about 85% of the dumplings I consume are purchased at the Asian supermarket. Surprisingly, them supermarkets grow on trees in my area. I usually fry them with very little oil on a skillet, and have them for snacks or an appetizer. Otherwise, I just order from the restaurant when I feel lazy to prepare them.
Thank you for the link ... I will try to make them myself *if* I ever get around to it. :D
